No-Bake Shamrock Shake Pie

If you love a classic shamrock shake, just wait until you try it in pie form!

The filling is cool, creamy, and lightly minty with a fluffy texture that literally melts in your mouth. The flavor is sweet and smooth with that classic shamrock shake taste, plus a little hint of vanilla and a refreshing mint finish that isn’t overpowering. It’s rich enough to feel like a treat, but still light and refreshing, especially served straight from the freezer!

The best part is how EASY it is to whip up this recipe! You only need 6 simple ingredients and there’s no baking required. Just mix, pour, and freeze. It’s the kind of recipe that feels almost too easy, but still delivers that fun, festive flavor that makes everyone think you spent way more time in the kitchen than you actually did.

This recipe makes enough filling for two pies, which is perfect for sharing or keeping one stashed in the freezer for later. Whether you’re making it for St. Patrick’s Day or just because you’re craving something sweet and minty, this is one of those desserts that disappears fast once it’s sliced!

Instructions

  1. Whip Up the Base – Combine the pudding mix and milk, beating together until smooth.
  2. Make It Minty – Mix in the mint extract and a green food coloring until you have your desired shade. Keep in mind that it will lighten up a little when you add the Cool Whip, so you may want to go a little greener than you think.
  3. Fluff It Up – Fold in the whipped topping until well combined and fluffy.
  4. Chill – Scoop into the pie crust, smoothing with a spatula. Chill in freezer until fully set.

Prep Tips

  • Mint Extract – Shamrock shakes are traditionally made with mint extract (or sweet mint extract). This is NOT the same thing as peppermint extract. While you can absolutely use peppermint extract in a pinch, the flavor will be slightly different.
  • Milk – You can use milk, cream, coffee creamer, or even plant-based milk for the liquid part of the recipe, to make the pudding. We actually made this with a dairy-free marshmallow flavored creamer and it was AMAZING!
  • Storage – Keep leftovers in the freezer for up to 2 weeks. You could also make this ahead of time, wrap tightly in plastic or keep in an airtight container for up to 2 months. Once opened and sliced, it won’t last quite as long. When ready to serve, run a metal pie spatula under hot water for 30 seconds for easier slicing.
