Tom Kha Gai Soup – Tender chicken simmered in a tangy coconut broth – there’s so much flavor in this bowl of soup! I love how light and easy it is and refreshing – all at the same time. This is my go-to recipe to make during the cooler months of the year.
Copycat Red Robin Teriyaki Burger – You’ll want to plan ahead to marinate the chicken breasts, but the actual cooking time for this dish is less than 10 minutes!

Instant Pot Sweet and Sour Pork – An easy spin on the takeout classic! I love making it in the Instant Pot as well for easy clean-up and quick cook time!
Pulled Pork Tater Tot Casserole – The tender pork with the crisp tater tots creates the best texture and flavor. I love to make this when we’re staying in for the weekend because it gives us leftovers all weekend long!
Hawaiian Ham & Cheese Sliders – Great for feeding a crowd…fast! Sliced ham, cheddar cheese, and juicy pineapples are baked on buttery sweet Hawaiian rolls. So much yum!
Mini Corn Dog Muffins – This is a favorite for the kids! Sweet and fluffy cornbread filled with juicy hot dogs and baked up in a muffin pan. So easy and the leftovers are perfect for packing in a lunch box.
